(a) One Dextranizing Unit (DU) or (SKB) unit of alpha-Amylase activity is defined as the amount of enzyme that will dextrinize starch at a rate of 1 g per hour at 30°C.

(b) One Cellulase Unit (CU) is defined as the amount of enzyme required to reduce the viscosity of 5% of a defined carboxymethylcellulose substrate under the conditions of the assay.

(c) One Lactase Unit (LacU) is defined as the amount of enzyme required to liberate 1 µmol of nitrophenol per minute under the conditions of the assay.

(d) One Lipase Unit (LU) is defined as the amount of enzyme required to the equivalent of 1 µmol of acid per minute from the substrate under the conditions of the assay.

(e) One HUT unit of proteolytic (Protease) is defined as the amount of enzyme that produces, in 1 minute at the specified conditions, a hydrolysate whose absorbance at 275 nm is the same as a solution containing 1.1 µg per ml of 0.006 N hydrochloric acid.
